Mergelsø is a cider producer based on a nature and forest estate centered around a lake (søen) in mid-Jutland, Denmark. The property has remained uncultivated for decades and features wild apple trees alongside heritage Danish varieties, with unique soil enriched by marl deposits from the ice age and a microclimate moderated by the lake that protects against late frosts. The company produces five cider cuvées and four pomme avec cuvées using classical fermentation methods, with production taking a full year from autumn pressing to bottling. All products are made from organic apples and other fruit grown on the estate; the company holds both Danish and EU organic certification. Distribution is selective, limited to restaurants and approved retailers.
