Pearse Lyons Distillery

Alltech 2017 Liberties Dublin distillery.

Pearse Lyons Distillery is housed in a restored 18th-century Church of St. James in Dublin's Liberties, with distillation operations beginning in 2012 and the visitor facility opening in 2017. The distillery is named after its founder, the late Dr. Pearse Lyons, and operated by the Lyons family, whose roots trace back five generations of coopers in Dublin. The company produces Pearse Irish Whiskey, Ha'Penny Spirits, and Míl Irish Pot Still Gin distilled with Mediterranean botanicals, alongside its Camino Collection single cask series. The distillery operates fermentation and alcoholic distillation processes, with spirits filled into glass bottles for retail distribution. Beyond production, the facility functions as a visitor destination offering distillery tours, whiskey and gin tastings, blending experiences, and cocktail experiences led by in-house staff, reflecting a focus on both craft production and experiential tourism centred on the site's heritage and the family's restoration of the historic church.
