Zillertal Bier Schaefer

Zell am Ziller Tirol regional brewery.

Zillertal Bier Getränkehandel GmbH, based in Zell am Ziller, Austria, is a family-owned brewery spanning 16 generations of operation since 1500, making it Tyrol's oldest private brewery. The company brews a range of beers including special varieties and white beers, fruit brandies, and Midi's soft drinks. All beer production uses quellfrisches (spring-fresh) bergwasser sourced from the Zillertal region, which the company identifies as having optimal water hardness of 2.7 German degrees for brewing. The brewery sources malts from Austrian growers, with malt produced to strict specifications; since 2013 the company has cultivated grain directly in Tirol, paying farmers four times the world market price for this locally-grown grain. Hops come from selected growers with multi-generational partnerships; the company uses fine aroma hop varieties including Cascade, which is grown exclusively for Zillertal Bier in the Mühlviertel region. Midi's lemonades, now 100% organic, are made from 100% natural ingredients, largely from freshly-pressed juices with no artificial flavours, stabilisers, or preservatives. The company operates the BrauKunstHaus, a visitor attraction featuring exhibitions and storytelling about the brewery's history and region. Zillertal Bier has been nominated for the Tirol Change Award for sustainable and responsible business practices.
