Appenzeller® Cheese is manufactured by Sortenorganisation Appenzeller Käse GmbH, a native Swiss organisation based in Appenzell. The cheese has been produced in the Appenzellerland region for over seven centuries and is made according to traditional Swiss methods. The product range includes four varieties: Appenzeller® Silver Label (mild), Appenzeller® Gold Label and Black Label (aromatic), and Appenzeller® Purple Label. The cheese is defined by its use of fresh mountain milk, mountain air, and a distinctive herbal brine preparation that gives it its characteristic flavour profile.
