Appenzell single-malt whisky aged in century-old beer casks combined with brewery.
Brauerei Locher AG, based in Appenzell since 1999, distills and matures Säntis Malt whisky using the brewery's historical barrel stock and spring water from the Alpstein. The whiskys mature in antique wooden barrels originally used for beer production, then finish in casks that previously held port, sherry, bourbon, sweet wine, pinot noir, rum and other spirits, each imparting distinct character to different editions. The company produces a range of spirits including Säntis Malt Classics, limited editions, single cask explorations, and whisky liqueurs. Brauerei Locher operates a distillery at Brauereiplatz 1 in Appenzell and offers experiences including tastings, private cask bottling services, and the Whiskytrek program.
