Colston Bassett Dairy

Colston Bassett 1913 Stilton cheese producer.

Colston Bassett Dairy is a cheese producer located in the Vale of Belvoir, Nottinghamshire. The company has been making Blue Stilton and Shropshire Blue cheeses since 1913 using traditional hand-ladled methods. All cheese is handmade by a skilled team of cheesemakers, with only four cheesemakers employed over the company's hundred-year history.

The dairy sources milk from three local farms within 1.5 miles of the production facility. Production methods retain labour-intensive traditional processes despite modern improvements made to comply with current food safety and hygiene standards. The company produces two cheese varieties: Blue Stilton, described as having a creamy texture with sweet and salty richness and velvety blue veining, and Shropshire Blue, which has a milder and sweeter flavour profile with peppery blue notes.

Colston Bassett Dairy sells directly to consumers and exports internationally, with established distribution through retailers including Neal's Yard Dairy in London, which has stocked the dairy's Stilton for 33 years. The cheeses are marketed for both direct consumption and culinary use in recipes.
