Kopernik Pierniki

Heritage gingerbread producer (1763) with ~250 employees making Toruńskie Pierniki and Katarzynki; private-label gingerbread supplier to Tesco UK and Auchan.

Fabryka Cukiernicza Kopernik is the oldest gingerbread producer in Poland and among the oldest in Europe, operating continuously since 1763. The company was founded as a gingerbread workshop by Jan Weese and transformed into a modern factory by his grandson Gustaw Weese in 1824. Following destruction during World War II, the factory was rebuilt and resumed production using traditional recipes preserved by pre-war staff. In 1991, Kopernik became Poland's first confectionery facility to convert to an employee stock ownership structure, with most workers becoming shareholders. The main production facility has operated at the same location on the outskirts of Torun since 1913. The company manufactures Toruńskie Pierniki (gingerbread), Katarzynki (spiced cookies), Wafel Teatralny (theatre wafers), and related baked confectionery products, distributed throughout Poland via major retail chains. Kopernik also operates a museum dedicated to Torun gingerbread traditions, occupying over 1200 square metres in the original 19th-century factory building on ul. Strumykowa.
