Mikrosvin Mikulov

Mikulov premium wine producer.

Mikrosvín Mikulov is a winery based in Dolní Dunajovice in the Mikulov wine sub-region on the Pálava slopes. The cellar facility, built in the late 19th century from fired brick, holds over 500,000 litres of wine, with production at approximately half capacity to allow space for wine archiving. Grapes are processed gently without crushing, using an olive pump for transport to pneumatic presses. Fermentation occurs in stainless steel tanks with controlled temperature between 18–20 °C using pure yeast cultures, with selected wine also fermenting in wooden barrels. White wines undergo filtration through diatomaceous earth and plate filters before individual bottling decisions. Red wine production involves manual processing of blue grapes with hand-stirred fermentation and malolactic fermentation, followed by barrel ageing; bottled wines mature at constant 12 °C. The winery has received multiple awards including Champion of the Czech Wine Salon 2023, multiple Prague Wine Trophy championships, and consecutive recognition in the Vinař roku (Vintner of the Year) competitions.
