Septem Microbrewery

Bioclimatic craft brewery on Evia; unpasteurised craft beers; some contract work.

Septem Microbrewery was established in June 2009 by chemist-oenologist Sofoklis Panagiotou and economist Giorgis Panagiotou in Oroloyio, Evia. The brewery specializes in the production of fresh, unpasteurized beer, intentionally avoiding pasteurization to preserve the flavor characteristics and aromatic qualities imparted by hops and malt. Each beer style in their portfolio is named after a different day of the week, reflecting the brewery's naming philosophy inspired by the Latin word "septem" meaning seven, the number of creation.

The brewery produces various styles across multiple series: Everyday Series (including Monday's Pilsner, WDAY Wheat IPA, Thursday's Red Ale, Friday's Pale Ale, Saturday's Porter, and Sunday's Honey Golden Ale), Hobby Hoppy Series (8th Day IPA and Quaranta Giorni NEIPA), Barrel Aged Series (Dilemma Barley Wine, Kleos Imperial Stout, and Lava Imperial India Red Ale), and Heretic Lagers (Mylos 1888). The brewery emphasizes selection of whole flower hops from unique varieties worldwide and applies principles of wine production philosophy to beer creation. Beer is sold fresh and intended for immediate consumption rather than aging.
