Mackerel is individually quick-frozen (IQF) in separate cells immediately after heading and tailing, ensuring full traceability from catch to retail. The company uses a chemical-free skinning process employing hot water and steam instead of traditional chemical methods. Primary fishing seasons are October-November for Atlantic mackerel (Scomber scombrus) and August-July for jack mackerel (Trachurus murphyi).
Sæby operates with strong sustainability commitments including their own wastewater treatment plant, continuous energy optimization, and CO2 reduction initiatives. Approximately 95% of production is private label for retailers, while 5% comprises SÆBY and NORD branded products.
