Le Gruyere AOP Cooperatives

Network of approximately 170 village dairies across Fribourg, Vaud, Neuchâtel, Jura and Bern producing AOP-certified raw-milk hard cheese.

Le Gruyère AOP is an interprofession based in Pringy, Switzerland, that oversees the production and certification of Gruyère AOP cheese. The organisation represents a network of milk producers, cheesemakers and affineurs who collectively produce the cheese according to established specifications. Gruyère AOP is protected by appellation of origin status, which establishes production standards and geographic specifications. The cheese is produced in several aged varieties, ranging from six to nine months for the younger wheels through to 18 to 24 months for fully mature cheeses. Production follows traditional artisanal methods that the organisation traces back to 1115. The interprofession provides a directory of member fromageries (cheeseries), oversees compliance with a cahier des charges (specification document), and manages the brand through controlled use of logos and designations. The organisation also promotes the cheese through recipes, events, sponsorship programmes and multilingual communication across ten languages.
