Roussas Dairy was founded in 1952 and has remained dedicated exclusively to cheese production using traditional methods passed down from the Sarakatsani nomadic shepherds. The company moved to a modern, state-of-the-art production facility in Almyros, central Greece, with annual capacity exceeding 10,000 tons of cheese and processing capacity for 80,000 liters of sheep's milk per shift.

The product range includes feta cheese (PDO), organic feta (PDO), goat cheese, organic goat cheese, kasseri (PDO), kefalotyri, manouri (PDO), strained yoghurt, and various other traditional Greek cheeses. All products are made exclusively from pasteurized sheep and goat milk sourced primarily from surrounding mountainous areas. Roussas Dairy was the pioneer of organic feta production in Greece and remains the market leader.

The company exports over 90% of its annual production worldwide to USA, Canada, Europe, Africa, Asia, Australia, Middle East, and Far East. Products are marketed under multiple brand names: "Roussas" (Europe, Australia), "Mt. Vikos" (USA, Canada), and "Mt. Athos" (Australia, Asia). The company maintains strong commitment to traditional production methods, quality ingredients, and non-GMO practices, with the factory designated as a GMO-free zone.
