Tete de Moine AOP

Bellelay region AOP cheese producers.

Tête de Moine AOP (Fromage de Bellelay) is a semi-hard milk cheese protected under AOP regulations and produced by six cheesemaking facilities in Switzerland. The cheese is characterised by its fine, delicate rosette texture, traditionally served using a cheese plane called a Girolle. The product is offered in multiple variants: Classic, Réserve, Extra, Bio, and Fermière categories, as well as pre-packaged formats including PirouetteBox and Rosomat.\n\nProduction is governed by the AOP cahier des charges, which specifies production standards and raw material requirements. The Interprofession Tête de Moine oversees the collective brand. Four of the producing cheesemakers are highlighted: Fromagerie des Franches-Montagnes, Fromagerie de Saignelégier, Fromages Spielhofer, and the Maison de la Tête de Moine at Bellelay, where visitors can also access the heritage centre. The cheese carries over eight centuries of documented history within the Jura region.
