Kaeserebellen

Hohenems mountain craft cheese specialist.

Käserebellen is a traditional cheese maker headquartered in Steingaden, Bavaria, with roots dating to 1860. The company specializes in hard and semi-hard cheeses produced from Heumilch (hay milk), a certified traditional specialty. Its product line includes Berg Rebell, Alpen Rebell, Gletscher Rebell and numerous flavored variants, plus soft cheeses such as Weißer Rebell and Roter Rebell, some available in certified organic versions. The company also produces butter from the same Heumilch sourced from mountain farmers. Käserebellen operates a vertically integrated business model, sourcing milk directly from certified suppliers and distributing through its own retail locations branded as Rebellen Alm. The Berg Rebell won a Super Gold Medal at the World Cheese Awards 2025, and the brand took multiple medals at the 2023 Käsiade competition. Production employs both traditional aging methods and modern techniques; the Gletscher Rebell is aged for 15 months and the Höhlen Rebell is matured in caves, while some cheeses are cold-smoked over beech wood. The company offers organic variants across major product lines and markets both standard and high-protein cheese products.
