Mauri

Aged cheese producer within Igor group; private-label.

Emilio Mauri S.p.A. is a family-owned cheesemaker founded in 1920 in the Valsassina region. The company operates two production sites: a modernised facility in Treviglio (Bergamo) for fresh cheese production, and the original location in Pasturo (Lecco) for aging and distribution. Mauri produces fresh milk cheese from Italian cow and goat milk, including DOP-certified Taleggio, Gorgonzola (sweet, peppery, and organic variants), Quartirolo Lombardo, and caprini varieties. The company also makes mascarpone, ricotta, mozzarella, and fresh goat cheeses. Mauri's production process combines artisanal techniques with modern quality control. Fresh milk arrives daily at Treviglio for processing; cheeses destined for aging are transported to Pasturo's natural mountain caves at the base of the Grigna, where they mature at controlled temperatures between 2–6°C for periods ranging from 45 days (Taleggio) to approximately 60 days (Gorgonzola). The company emphasises hand-operated procedures including manual salting, turning, and packaging. It describes five generations of cheesemakers and maintains that its mountain cave aging cannot be artificially replicated.
