Moulin de Bonvent

Burgundy organic miller using Astrié stone mill to produce flours from organic wheat, einkorn and rye for craft bakers.

Moulin de Bonvent is an organic grain farm located in Marey-sur-Tille in the Côte d'Or region of Burgundy. The 296-hectare family property operates on organic principles adopted in 2020. The mill offers several flour grades milled on a single passage through an Astrié mill—specifically a stone mill that processes grain gently in one pass to preserve nutritional qualities and minimize oxidation and heating. Flours include T80 (for pastry), T110 (semi-complete for bread), as well as spelt and rye flour, all produced and processed at the mill. The company sells flours in bulk and packaged sizes online and on-site, with retail distribution through local shops, farmers markets in Is-sur-Tille, and direct consumer sales. The operation emphasizes low-gluten flours obtained naturally through the milling process rather than mixing in bran separately.
