Minoterie Bourseau

French miller since 1825 producing red-label and organic flours from wheat, rye, spelt, einkorn and buckwheat on cylinders and stone wheels.

Minoterie Bourseau is an independent, family-owned mill operating since 1973 from Nozay in Loire-Atlantique and tracing its milling heritage to 1825. The company produces a comprehensive range of flours for bread, viennoiserie and specialty baking applications, milling wheat, rye, épeautre (spelt), petit épeautre and buckwheat. Production employs both stone mill (meule de pierre) and cylinder milling methods. The product range includes Bagatelle Label Rouge flours in various extraction rates (T80, T65, T45), flours certified for traditional French bread production, organic certified flours, creative composite flours under the Secrets de Mon Père brand, and ready-to-use blends marketed as Farines Terroir. The company also produces grains and fruit additions available in organic versions. Beyond flour supply, Minoterie Bourseau provides support services to artisan bakers including business consultation, training, auditing, Label Rouge and organic certification assistance, and event coordination.
