Family-owned specialist in pulses, cereals, dried mushrooms and snails since 1819. Leading producer of Lentille verte du Puy A.O.P. and Petit Épeautre du Velay serving 70+ countries.

Sabarot is a French company based in Haute-Loire with seven generations of expertise in processing pulses, cereals, and specialty ingredients. Founded in 1819 as a mill, the company evolved to specialize in sorting and processing green lentils, dry beans, cereals, wild mushrooms, and snails. Today it operates as a B2B and B2C business with three subsidiaries: Sabarot Agriculture, ILTA, and France Alimentaire.

The company has invested heavily in modernization, inaugurating new facilities in 2023 worth €20 million. It employs 150 staff and generates €68 million in annual revenue. Sabarot is renowned for its IQF (Individually Quick Frozen) technology for pre-cooked and quick-frozen pulses and cereals, offering rapid-cooking variants (8-10 minutes vs. traditional 20-90 minutes). It developed vegetable-based preparations including dahls and galette mixes using natural, additive-free ingredients.

The company holds B Corp certification and PME+ RSE label, emphasizing commitments to sustainable agriculture, local farmer partnerships through Sabarot Agriculture, bio and HVE transitions, environmental protection, and employee welfare. Its star products include morels, quinoa, bulgur, green lentils of Puy A.O.P., and petit spelt of Velay.
